Blueberry mousse, blueberry gelée, licorice ganache, chocolate biscuit, shortcrust
This cake was a rich, aromatic, very well realized, no-nonsense affair. The blueberry mousse which was half way to being a crémeux had a full, natural blueberry flavor that Japanese pastry shops usually fail to attain, due to the berry not being grown in Japan, its rich color betraying the equally impressive taste. The chocolate biscuits were structural but there was plenty of chocolate taste from the ganache which struck a perfect balance with the licorice it contained. A round cake, no better word for it [even though it is triangular].
