Pistachio dacquoise, pistachio mousseline, candied pistachios, cherry jam

This cake is pure pistachio goodness.

Light but flavorful pistachio dacquoise alternates with naturally colored = hardcore flavored pistachio mousseline. The sole layer of cherry jam might look lonely but is exactly the right amount to cointerpoise the sweet dacquoise & pistachio nuttiness without getting in the way. The crowding candied pistachios on top make for a textural delight.
