The pound cakes at Norihiko Terai’s pâtisserie Aigre Douce are among the, if not the single best thing [yeah that can’t be grammatically correct as we’re talking several flavors here] wattwurmnashi has ever eaten.
As a direct consequence, there are no really good photos of this vanilla variant because impatience took over & obviously, I only managed to squeeze in a snapshot when almost through the whole thing.
Plentiful vanilla seeds gave it an unmistakable aroma, but the real star here was the underlying cake itself.
I can’t say it was the almond meal because that would apply to plenty of pound cakes.
I can’t say it was the butter either because that would apply to plenty of pound cakes.
Aigre Douce pound cakes are too good to be believed. You have to actually go & try to understand. They are the most flavorsome, most perfectly textured ones you will ever come across no matter where.
”We only use top quality ingredients” is a statement boringly overused. All you pretentious places turning out mediocre fair or worse, go & have an Aigre Douce pound cake [1 of each flavor of course] & be ashamed.
